		<description>As head cook in the Kelly household, I am always looking for new delicious recipes for Erin and Tim when they return after a hard workout at Crossfit908.  Here&#039;s one I adapted from a recipe I found online.

Delicious CrockPot Paleo Pork Loin Dinner

2-3 lbs boneless pork loin 
3 apples, cored, peeled, and sliced thickly
1/2 cup apple juice
1/3 cup  honey
1 tsp. ginger
2 Tbsp. vinegar
salt and pepper

First, put the pork loin on a rack on a baking pan.  Brown it in the broiler to get rid of some of the fat.  (I even cut off some of the obvious fat.) The browned meat adds to the flavor later.   Dispose of the fat.

Put the apple slices in the bottom of a crockpot. Then put the pork loin on top of the apples. Combine the rest of the ingredients, and pour over the roast. Cover and cook on low for 10-12 hours.

Serve with roasted vegetables, cauliflower &quot;rice,&quot; unsweetened applesauce.</description>
